What I Eat in a Week (Pt. 1)

Hi, friends! It’s been a while since I made a cooking video, but my goal is to make at least one a month after we get settled in our new house (probably in late February). Right now, we’re still situated in our temp apartment. I’m grateful for this beautiful little kitchen, though! It has everything I need to feed myself and Jon.

Our schedules are quite jam-packed, so I tend to go for the same, easy recipes that are tried-and-true. I don’t always eat three square meals a day because I don’t usually get hungry until noon. I’ve been practicing intuitive eating for years now, and it’s helped my health and body image tremendously. Intuitive eating is when you only eat when you’re hungry and you stop when you’re full. Sounds simple, right? Not always.

We tend to turn to food when we’re bored, emotional, or stressed out. Food is oftentimes treated like therapy rather than sustenance. Intuitive eating helps me to honor the body that God has given me by treating it gently and respectfully.

With that said, I hope my go-to recipes will spark inspiration for you! I’ll link to as many similar recipes as I could. When it comes to cooking, though, I like to experiment by adding or subtracting ingredients as I see fit. Feel free to do the same! These recipes are forgiving, I promise.

MONDAY

Breakfast: Freshly squeezed orange juice

Lunch: Korean fried chicken

Dinner: Salmon rice bowl

TUESDAY

Breakfast: Overnight oats

Lunch: avocado fries & graze board

Dinner: Kimbap

WEDNESDAY

Breakfast: Matcha latte

Lunch: Bibimbap

Dinner: Slow cooked oxtail stew

THURSDAY

Breakfast: Chamomile tea

Lunch: Shrimp ceviche

Dinner: Hot pot udon

FRIDAY

Breakfast: Overnight oats

Lunch: Avo toast w/ kimchi

Dinner: Went out to eat!

Please note that I don’t usually cook this much for myself every single week. It’s borderline impossible with the other responsibilities on my plate. These are just my tried-and-true, go-to recipes when I do cook. They’re all on rotation in my household because of the minimal cleanup, healthy ingredients, and superb taste.
